Four Secrets to Finding the Freshest Fish

  1. Smell of fresh fish: Fresh fish should smell fresh and mild, not fishy, sour, or ammonia-like
  2. Check the eyes: The eyes of a fresh should be clear, shining and bulging. If the eyes are cloudy, or have sunken into the head it could suggest that the fish is old.
  3. Check the gills: The gills should be bright pink or reddish in color with no odor. They should also be slightly wet and not slimy or dry.
  4. Body of a fresh fish is firm: The flesh of a fresh fish is firm and should spring back when pressed.
